About this recipe

Fresh ginger tea is an infusion of the rhizome rather than a drink made from tea leaves. This plain version uses no sweetener, citrus or additional spices, letting the ginger aroma and peppery finish stand on their own. The ginger is measured along its length, as in the original method; root thickness varies, so this is an approximate flavour guide rather than a precise weight. Even thin slices are easy to strain out and give you a useful point of comparison for the next batch. A gentle simmer limits evaporation; the finished volume is still a little smaller than the starting water. Taste a cooled sample during brewing and strain when the strength suits you. Allow time for the hot drink to cool before sipping. The washing water is listed separately and discarded. Clean equipment helps keep this simple ginger-and-water recipe free from unwanted additions.
