About this recipe

Fruit purées and refreshing mixed drinks have long histories in many food cultures. The modern smoothie became especially popular when electric blenders spread during the twentieth century. This mango smoothie should not be confused with South Asian mango lassi, which is traditionally based on yogurt: this version uses almond drink and is vegan. Ripe mango gives a fragrant sweetness, banana creates body and lime adds fresh acidity. Briefly soften hard-frozen mango pieces before blending, and use a machine approved for frozen fruit. Adding the liquid before the fruit makes blending easier; only add a little cold water if the mixture needs loosening. It is a convenient breakfast drink, a fruity afternoon snack or a summer refreshment. For the best texture and colour, serve it immediately after blending.
