About this recipe

Hugo Spritz is a light, sparkling aperitif associated with northern Italy and the South Tyrol region. Unlike a bitter orange spritz, this version is flavoured with alcoholic elderflower liqueur and fresh mint. The mint is pressed gently in the serving glass and rests in the liqueur for three minutes, so no syrup or pre-made herbal mixture is required. Dry Prosecco provides the wine base; a small measure of sparkling water softens the sweetness. Add both liquids well chilled and stir only once to retain carbonation. A thin lemon slice brings a fresh citrus aroma without changing the floral profile. Six drinking-water ice cubes cool a single glass. The liquid measures total about 180 ml before melting or the space occupied by ice and herbs. Drink immediately; this is an alcoholic recipe and the wine and liqueur may contain sulphites. The syrup-based and alcohol-free versions are different recipes and are not offered as substitutions here.
