About this recipe

Classic German bread rolls have a thin, golden crust and a light, airy centre. This lean dough needs just wheat flour, water, dried baker’s yeast and salt. An extended rest in the refrigerator slows fermentation so the dough develops flavour and structure. After the cold rise, divide and shape the dough gently rather than knocking out every air bubble. Let the shaped rolls rise once more until noticeably puffy. Scoring their surface immediately before baking determines where the crust opens. Steam in the first few minutes keeps the surface flexible while the rolls expand; letting the steam escape later helps the crust become crisp. A fully preheated baking tray also improves the oven spring. Cool the baked rolls on a wire rack so trapped moisture does not soften their bottoms. Two rolls make one serving in this recipe.
