About this recipe

Banana nice cream is a frozen fruit dessert made by blending ripe frozen bananas. This one-ingredient version needs neither an ice cream maker nor milk, water or sweetener. The banana supplies its own flavour and naturally occurring sugars; no added sugar does not mean sugar-free. Thin slices freeze more evenly than a whole fruit and are easier for a suitable food processor to break down. A brief pause outside the freezer helps the pieces move, but they must remain frozen. The texture changes during processing and is best served immediately as a soft, spoonable cream. More blending is not always better: friction warms the fruit. Long storage after blending produces a harder result rather than the same soft texture. The base batch makes small fruit-dessert portions, without toppings or accompaniments.
