About this recipe

Carrot soup belongs to a long European tradition of puréed vegetable soups. A well-known French relative is potage Crécy, named after the town of Crécy-en-Ponthieu. Combining carrots with ginger is a more recent, internationally popular approach, with no documented single inventor or reliable year of origin. This vegan version gains sweetness from carrots, gentle warmth from ginger and a velvety body from potatoes rather than cream. Cut the vegetables evenly so they become tender at similar speeds and check that they are fully soft before puréeing. Handle hot soup only with a suitable appliance and respect its fill limit. Lemon juice brightens the flavour at the end. Serve this warming carrot and ginger soup as a starter, a light lunch or a comforting supper on colder days.
