About this recipe

Edamame are young soybeans cooked and served in their green pods. The pods themselves are fibrous and should be discarded; only the tender beans inside are eaten. This Japanese snack can be prepared straight from frozen without thawing. A pot of gently boiling salted water cooks the beans in approximately five minutes, although the packet directions take precedence when a longer duration is needed. In this version the cooking water contains five teaspoons of fine salt per litre for a four-portion batch, while a separate measure of coarse sea salt is sprinkled over the warm pods at the table. Most of the measured salt from the cooking water is discarded with that water. Drain the cooked pods through a sieve without rinsing them, then serve while still pleasantly warm. Soybeans are a common allergen; check the product label, handle frozen foods hygienically and refrigerate leftovers promptly.
