About this recipe

Clementine pumpkins are a playful Halloween fruit snack made by giving peeled citrus a small green vegetable stem. Their natural orange colour and rounded segments suggest a pumpkin without food colouring or icing. The idea appears on many international party platters, but a single inventor is not established. This version uses only fresh seedless clementines and tender celery stalk with fresh leaves. Sweet, juicy fruit contrasts with a small crisp, gently savoury stem. Easy-peel fruit is preferable because the segments need to stay joined; thick loose pith can be removed without tearing the delicate membranes. No cooking or chilling is required before serving. If made ahead, the peeled fruit needs a close-fitting cover and refrigeration so it does not dry out. There is no actual pumpkin or added sugar in the recipe, although the fruit contains its own sugars.
