About this recipe

Belgian-style waffles made with baking powder have deep pockets and a tender middle rather than the caramelised sugar crystals of Liège waffles. This version uses flour, whole eggs, milk, butter and a little vanilla to make a quick batter without a yeast-rising stage. The batter is stirred briefly and rested while the waffle iron becomes hot, giving the leavening agent time to work without prolonged mixing. Each portion is baked until steam slows and the middle is fully cooked, then held on a wire rack so escaping moisture does not soften the crust. Three kinds of fresh berries add contrasting colour and tartness; lightly sweetened whipped cream is served separately until the last moment. The topping is optional in the component selector, so the waffles can also be eaten plain. Fresh dairy cream remains refrigerated until it is needed, and the completed waffles are best eaten immediately.
