About this recipe

Roasted chestnuts are a familiar autumn and winter snack across Europe, from Italian caldarroste to warm paper cones at Christmas markets. Unlike crunchy roasted nuts, their cooked centres should be tender and slightly floury, with a naturally sweet flavour. This recipe uses fresh chestnuts in their shells, not vacuum-packed cooked ones, and needs no butter, oil or sugar. Soaking and a brief rest in a towel help with peeling, but freshness and variety matter as well. Remove the brown inner skin along with the outer shell. Similar-sized nuts cook more evenly; a peeled sample tells you more than an opened shell alone. Serve them warm as a simple snack. The stated time includes the hour-long soak and peeling, with extra time needed for unusually large nuts or several batches.
