About this recipe

These Halloween banana ghosts use four firm bananas and 30 g of plain dark chocolate to make eight small treats. Cut the fruit crosswise so each half has a flat base, then pipe on chocolate eyes and a round mouth. A small piping-bag opening helps make neat faces without coating the bananas or using sticks. Melt the chocolate over gently simmering water, keeping the bowl above the water, and let it cool until just warm before piping. Chill the finished faces for five minutes to set. The recipe takes about 15 minutes including chilling and serves four portions of two ghosts each. Firm bananas stand better than very ripe fruit; peeling close to serving helps the cut surfaces stay pale. If you need to wait, cover and refrigerate the ghosts at 4 °C or colder, then serve within one hour. The amount of chocolate is scaled from a well-rated comparable banana-ghost recipe that uses one tablespoon for two bananas.
