About this recipe

Baking sweet potatoes whole is a low-effort way to turn an ordinary root vegetable into a warm side dish without oil, seasonings or foil. The dry oven heat softens the orange flesh and concentrates its natural sweetness. Choose roots of similar size so they cook at about the same rate. Scrub the skin well and prick each one several times to allow steam to escape. A sheet of parchment protects the baking tray from any caramelised juice that leaks out. Oven times vary with size, variety and actual temperature, so a knife test is more reliable than a fixed timer: the blade should slip to the centre with almost no resistance. Sweet potatoes are botanically distinct from regular potatoes, although they fill a similar role on the plate. This deliberately plain version highlights the vegetable’s own flavour and needs no butter, salt or sauce.
